Yesterday was rainy and gross, so what better to do than bake pie? I wasn't really in the mood to do just one big pie though. I got the idea for these pies from Bakerella, and they were so cute that I had to try them myself. They were delicious!

This is the recipe I used, slightly altered from one of Martha Stewart's.

2 1/2 cups flour
1 tsp. salt
1 tsp. sugar
1 cup butter (chilled and cut into cubes)
1/4 to 1/2 cups ice water

1. Mix flour, sugar, and salt.
2. Using a pastry blender, cut cold butter into mixture until it resembles coarse meal.
3. Slowly add ice water 1/4 cup at a time until the mixture hold together without being sticky. If 1/2 cup isn't enough, continue adding water, 1 tb. at a time.
4. Cut in half and chill, in discs, for 1 hour.

5 - 6 small apples (I used Granny Smith)
1/3 cup sugar
1/2 tsp. cinnamon
1/4 tsp. salt
1 tb. butter

1. Preheat oven to 450 degrees F and grease a cupcake tin.
2. Peel and slice apples, then mix all ingredients.
3. Cut circles out of dough big enough to fill cupcake tin, with a bit of dough sticking up above the edges of the tin, and fill with filling. Use remaning dough as tops of pies.
4. Bake for approx. 15 minutes.

I really like it! Though, I have never in my life made a pie anything. So when I read the "filling" part of the instructions, I was curious at how to do the filling exactly. Slice the apples into slices or cubes or mush them? I don't eat pie, either - so you kinda have an idea where the pie-naiveness comes from. :/

Though, they look sooooo good. *saves to memories*

pies are soooo easy! i was scared to make one but the first time i tried it the pie turned out absolutely delicious and it was easy as well... pie.

Quite understandable! What I do is use an apple corer (this is the one I have) so that they're in thick slices, then I slice those so they're thinner and cook more easily-- probably between 1/8 and 1/4 inches thick. In this case though, since the pies are so tiny, I then cut those slices in half since they were so long.

Filling-wise, the recipe turned out to be perfect. As for the dough, I had a bit extra, which would come in handy if you wanted to make a different type of design for the top crust. So, yes! :]

i have to ask though, do you think cutting up the butter into smaller blocks and using a mixer to blend would work the same way as a pastry blender?

hm, i really have no idea. the original recipe was actually for a food processor, so the mixer might work...if you do try it that way, let me know how it turns out! :]

I just made these this afternoon. The batter didn't make enough after lining 12 cups to do any of the tops, so the finished products are tarts, not pies.

However, they smell and look awesome and taste great. My kids ate them pretty fast as well. Thanks!

two questions, though:
1) how did you get the pies out of the tin without the tops crumbling away on you when they came out (presumably upside down)?
2) do you think this would bake properly with a flat top crust, instead of a lattice shape?

These look so cute!! :D They're exactly what I was looking for. I said I'd make apple crisp for a big SAI brunch, but I was thinking it'd be too messy and hard to deal with, so I was thinking that maybe a mini apple pie recipe would be much less messy, and these are just so cute I can't resist :D
